Week Five at the University of New Hampshire!

Hello again! I cannot believe how fast this internship is flying by and that my time here is more than half way over. More amazing things happened this week in New Hampshire.

On Monday, I finished up some work in Foodpro that Dahlia had asked me to complete. I then had the opportunity to meet with Maggie Dylewski, PhD, RD, LD, who is the Director of the Didactic Program in Dietetics here at UNH. I have found much joy in my stay here, as well as become interested in the Dietetic program. The initial reason for meeting Maggie was to approach the possible idea of transferring to UNH and just to get to know the program better. Maggie showed me around the Nutrition building. I got to see their clinical room, that is equipped with materials to preform finger pricks for various blood tests, BMI assessment equipment, and even a Bod-pod! I also saw one of the main laboratories and met the two professors in charge of the Dietetic Internship here at UNH. Afterwards, Maggie and I ate lunch at the Dairy Bar and were able to sit down and get to know one another better. We shared stories and I learned a lot about her nutritional background. Ironically, Maggie earned her undergrad at Penn State of  Pennsylvania, my home state. I learned that Maggie worked in a pediatric burn unit for a Peds hospital for quite sometime. It was really great to get to know her and share similar interests, since I hope to be specializing as a Pediatric/ Pre-Natal Dietitian. I cannot express my gratitude for the opportunity of meeting not only Maggie and Rochelle, (UNH on site dietitian) but all of the Staff that I have worked with so far. They truly are making an impact on me.
The rest of the day I was able to work at the Dairy Bar and fill in were help was needed.

On Tuesday I had the opportunity to work with Eric Gibson, MAO Ed., Assistant Manager of Production. Together we preformed a mock Safety and Sanitation Inspection of Union Court. I was able to experience the steps and processes it takes to preform an inspection, as well as learn what types of things are looked at during the inspection. Afterwards, both Eric and I wrote up our own formal reports of the inspection, which where presented to the supervisor of Union Court. I sat down one on one with Kathy, Union Court Kitchen supervisor, and discussed my findings. It was great to work with Kathy and discuss her operation, and really overall restaurant operations. I spent the rest of the afternoon catching up on some work for marketing.

I spent Wednesday morning working on Foodpro projects for Dahlia. I updated all of the food cost and menu prices for each concept in Union Court. In the afternoon I took a ride with Richard over to the Pita Pit trailer. We gave a tour to the two supervisors who will be operating it. It was awesome to see their excitement and really get the idea of the ins and outs of the trailer.

Thursday morning, I collaborated with Rochelle on a project for the Union Court. She would like to see a more formal allergen process in the Union Court. We discussed various efforts, similar to what is implemented at the Dairy Bar. The goal is to provide employees with resources to refer to when approached by a customer with a food allergy. I got to eat lunch with Rochelle and then attend the last resource fair.

On Friday I spent more time at the Dairy Bar. My work on the ice cream sign was appreciated so much, that Jane had asked me to design their other ice cream sign that hangs in the restaurant. In the evening while out on an errand, I decided to stop at a bridge pass near the college. Since my stay here I have driven past it multiple times and always wanted to stop. I sat by the water and was able to spend time appreciating the amazing view and catch











up on some reading.

Over the weekend I decided to go hiking, something that everyone has been recommending I do since I got here. I hiked Mount Major, a very popular mountain here in New Hampshire. And then on Sunday, I spent the day relaxing, periodically hanging out with the girls in my residence, and most excitingly getting to watch Germany compete against Slovakia in the Euro cup.
