Week 4!
This week Erin and I helped at
Couch and learned the fundamental work that goes into the kitchen to feed
hundreds of students. We got a tour through Couch and an overview of all the
equipment that the staff use to provide the upmost service for students. We
looked at the production side, which displayed recipes being created and the
calculations that are involved to feed all the Crimson Camps that come in to
eat for breakfast, lunch, and dinner. There were about 650 students within
these camps and that’s not including the other camps that were going on
throughout the week such as wrestling and cheerleading.
With the Crimson Camp, we also
learned and participated in how they set up a BBQ to feed the many students
that OU has this summer. Doug, who is a supervisor at Couch visually demonstrated
to us how he breaks down the serving lines to make sure that they are able to
get the students through quickly as possible. The reason why he does this is
because they will be serving 650 students at this BBQ. At this event there was
6 tables set up and 1 was the allergen/diet table. Doug stood at the head of
the tables and broke the Crimson camp up into sections so they could be served
at the 5 tables more efficiently. Also, he mentioned about the special
allergen/diet table for those individuals who have specific diets. It was neat
to see how smooth it was going. They staffed enough individuals that there was
no extra help needed. We served over 650 individuals in 34 minutes. Doug calls
that a new record!
After that we just listened to
other skills that the workers at Couch provide for the University. One
individual was from France! She told us how much she loves cooking and seeing
how the servers work alongside one another to be more efficient!
