This and next week are very interesting. My program director is not here due to his scheduled vacation but my schedule is nice and full! I am meeting with lots of new people and working in areas I have not seen yet. So I'll give you the run down of my week.
Monday, June 27th: Today I worked with Kent who is the Marketing Manager for RPS Dining. He is responsible for maintaining the websites, pricing menus, working with vendors, and much more. I shadowed him throughout the day and met the rest of the marketing team for RPS (Residential Programs and Services).
Tuesday, June 28th: I worked at McNutt which is one of the dining facilities on campus that primarily feeds camps and employees during the summer. Lots of different camps come to IU over the summer from all over the country. Football, Soccer, Swim, even cheerleading camps. In July we'll be hosting the Best Buddies conference and feeding over 3,000 people! McNutt is also responsible for making the meals for the daycare facilities on campus. In the morning I worked with Karen to help prepare lunch for the children at the daycare. We made grilled chicken with couscous and broccoli. Because there are many allergies we have to carefully cook the food and be aware of cross contact. Here is a picture of us making the couscous in a SJK...the biggest one I've ever worked with!
Wednesday, June 29th: I shadowed Sandy Porter who is the manager of Collins dining. I actually got to work with her on a special project for an upcoming soccer camp. It was actually a lot of fun because I was able to put my detail-oriented self to good use!
Thursday, June 30th: I interviewed Ancil who is the Associate Director of Production at IU. In addition to overseeing all of production, Ancil is certified by ACF (American Culinary Federation) and is an instructor for the National Restaurant Educational Foundation. IU sponsors team leaders (cooks) on campus to go through culinary training which is taught by Ancil. I actually will be able to attend a class next week!
