Monday, July 4th
Fourth of July was super fun in Lawrence! Julie and I got to experience "Kaboom," Lawrence's Fourth of July festival filled with tons of fireworks (of course), good music, and great food. Julie and I had the pleasure of meeting some friends here at KU so here are a couple of pictures of our work-free Monday!

Tuesday, July 5th
Tuesday we were thrown back into the busy work flow! It started with mid-term evaluations given by Christine. They were nerve racking, I admit, but very helpful on both Julie and I's part - we appreciated all of Christine's comments! Afterwards, we had endless amounts of project time (yippie)! Working on the multiple monthly nutrition topics are a tough job, but I feel they will be very rewarding.
Wednesday, July 6th
Wednesday was a very unique time for Julie and I! It was an entire day of just recipe testing and tasting! Before we got into the new, yummy recipe making, Chef Travis, KU's newly promoted Executive Sous Chef (congrats Travis!), informed us of the recipe creating process. I learned so many new things since I've never truly been introduced to the kitchen before. It all revolved around the correct ways of writing recipes and ensuring they will feed the mass amounts of students we will be serving at our end of internship themed dinner. Then, for our "Original Rules of Breakfast" theme, we made a whole-wheat pizza crust, whole-wheat pancakes with berry syrup, and one version of our peach tart (for James Naismith's famous peach basket of course)! Though some recipes were fantastic on the first try, about half had to be tested again, which meant more tasting in the future (Julie and I were just fine with that)! Chef Travis and Chef Mary were great to work with for this project!

Thursday, July 7th
Thursday called for more project time, specifically finishing up our breakfast pizzas and the peach tart! We had some winners for our final recipes and we are very excited to share them at the dinner! In the afternoon, Julie and I had the privilege to go to the new DeBruce Center and speak with Cindy, the DeBruce chef and manager. She told us all about her ventures in the start of the new center, which houses the Original Rules of Basketball (hmmmm, wonder where Julie and I got our theme inspiration from?!) and how she picked the specific concepts for the Courtside Cafe, which serves both the public who visit the museum and the basketball and football athletes of KU! Her experience and insight were great to listen to. Afterwards, Julie and I were give another tour of the DeBruce center and even invited to eat when the athletes ate at their private dinner!
Friday, July 8th
Friday morning was a bustling one! Julie and I got to visit with Chris, KU Dining's satellite operations manager. Chris is essentially in charge of most retail locations on campus, including all coffee shops. We first visited him at the Mortar and Pestle, the KU School of Pharmacy's coffee shop - the entire building was gorgeous! After hearing about his role in KU Dining and observing how his operation serves all other locations with cold foods and other items, he took us on a tour of some of his other locations on campus. We went the Fueling Station for the KU athletes to hear how he services athletics and then we also visited KU's brand new Capitol Federal Hall School of Business - which was also so gorgeous! Chris' coffee shop in the School of Business is the first of it's kind - KU Dining has franchised the coffee shop to the school so they can use it as a business model for their students - how interesting is that?! Chris is definitely excited to see how this new venture pans out, as is the rest of KU Dining's retail team! After our exciting morning, Julie and I met with multiple Mrs. E's staff to solidify our recipes and orderings for our themed event. We also sent in marketing requests and worked on project for Aaron, the sports dietitian. Though Julie and I have had A LOT on our plates all at once, we've been having fun the entire way!
