This past week has been an exciting one! We started the week off with a visit to the Food Buyer’s office. Here, Alice and Tom (food buyers) taught us how to use Food Pro and discussed about the bid process and vendor contracts. We also helped pull orders, order products for the department in the morning.
On Tuesday, we visited Bruce, the business manager, who walked us through the University General Ledger System, departmental billing, and the preparation method for weekly and monthly reports in all the dining units. We later met with Connie, the computing manager, who taught us about the technology behind the dining operation.
The next day, we met with Kirk, the manager at the RU Express office. Kirk walked us through the operation and distribution process of Rutgers Student Identification Cards. We even got to help make a batch for the incoming freshman students.
During our break, Kirk showed us the machine on which they make gift cards. Certain cash operations, like the diner and market, offer gift cards for holiday seasons. Kirk let us design our own cards, so Denisse and I made some school spirited bookmarks.
On Thursday, we visited the Rutgers Club, a fancy restaurant on campus for alumni, students, faculty, and staff. During the summer, it’s open only for lunch with Thursday being buffet-style versus a la carte. We met with Chef Tommy who had us prep some carrots, bell peppers, kale, shallots, tomatoes, and broccolini. It was really cool to see our prepped ingredients on our plates that afternoon! Chef Tommy also helped us design our buffet menu, which will be featured and executed in 2 weeks. Our menu will feature seasonal foods. More to come on that in a few weeks!
On Friday, we visited Cab Fare, a cash operation located within a medical hospital. We met up with the managers, Scott and Catherine, who gave us a tour of the facility and answered our questions about managing a cash operation within a medical academic building and the differences between a student dining hall and cash/retail facility.
Our weekend adventures kind of started on Friday morning...at 3am. Denisse and I just can’t seem to stay away from the exciting atmosphere of the city! Our preceptors had told us that going to a Good Morning America concert in Central Park was once-in-a-lifetime must-do attraction, so Denisse and I went to see Demi Lovato on Friday morning. It was really exciting!
We also ventured out to the Top of the Rock, Museum of Modern Art (this was too cool!!), and St. Patrick’s Cathedral.
Overall, this week has been amazing and we’re always so surprised at how many individual departments are involved in a food service business. It’s incredible how everything comes together. Next week, we’ll be visiting some more cash operations and going on a tour of a meat factory. So, stay tuned! :)
