Greetings from Rutgers University!

Hello! My name is Kristin and I’ll be interning this summer at Rutgers University! I just finished my third year at UC Berkeley as a nutritional science major and I’m super excited to explore the various facets of foodservice and management this summer at New Jersey.
Hi fellow NACUFS Interns! I’m Denisse and I am going on to my senior year at San Diego State University to finish my BS in Foods and Nutrition! I have never been to the East Coast, so it’s been a little hard getting used to the different time zone and I’m not too sure how I’ll be able to handle the humidity everyone keeps mentioning but nevertheless I am thankful for this opportunity and thrilled to be spending the next 8 weeks at such a prestigious school.

On our first day, we were warmly welcomed by our preceptors, Peggy, Kelly, and Sandy, with lots of Rutgers gear and a fun tour around campus. We also paid a visit to the new Institute for Food, Nutrition, and Health, where we were able to eat at the Harvest Cafe, a cafe that features locally sourced and sustainable foods. It was delicious!!

On Wednesday and Thursday, we met with the executive director of Rutgers Dining and business affairs. Nick, the director of operations, also drove us to the different operations on campus. We were so impressed by the array of campus eateries. There was a diner, a food truck, bake shop, market, and cafe, on top of the usual all-you-care-to-eat cafeterias that are present on many college campuses.

Henry’s Diner is a unique cash operation at Rutger’s University for students.


Friday was the day that we met with Peggy, our preceptor and the university’s nutrition specialist. Peggy works at the Institute for Food Nutrition and Health, so we spent the day learning about specialized dietary needs, nutrition education, newsletters, outreach, and research. Her role in the university is so fascinating, and it was really fun seeing what it would be like to work as a Healthy Dining Intern.

Since we are both from SoCal (Southern California), we don't have a car (it would have been a little too much to drive from coast to coast!), which means we'll be relying on the NJ Transit for everything. It’s been fun taking the train and walking everywhere we go though! Neither of us had ever been to New York, so it was easily determined that the first item on our bucket list would be to travel there and do all the touristy things! Exploring the city was a ton of fun and we’ll definitely be back for more.

On Sunday, we spent some time exploring Princeton since it’s only 10 minutes away from us. Princeton is such a charming little town and it’s campus was beautiful.

Overall, our first week at Rutgers has been amazing. Everyone is so welcoming and friendly here and we have already learned so much! We can’t wait for all the food service and management adventures ahead of us!
