Week 1 at Texas Tech University

I'm amazed to think that I moved to Lubbock only a week ago. My fellow interns and I had Memorial Day weekend to settle into our dwelling on campus. We share a room and have a kitchen (hallelu). We all do wish we'd brought more of our cooking supplies from home! But Texas Tech generously gave us a set of basic pots and pans that are definitely being used.

There are four of us interns total; all are Nutrition-Dietetics majors. Since we had Monday off due to the holiday, we drove to Amarillo, TX and did some touristy things.

Tuesday we had orientation, meeting everyone and exploring several dining venues. The rest of the week, we worked from 9AM-4PM under the supervision of the registered dietitian (RD) mainly. Our work revolved around taking the first steps on our Capstone Project- helping TTU transition one of their All-You-Care-to-Eat dining locations to a gluten-free dining location for fall 2016.
Also we each chose a topic to write about for a Wellness Wednesday article for the RD. If you want to read a sampling of her many other Wellness Wednesday articles, there are some posted on her blog: https://eatattexastech.wordpress.com/
At 6:30 Monday morning, Megan and I will be starting our first day of work at a dining location! Hopefully it won't flood this week.
