Being our first real week of work, they kept us very busy, exposing us to many of the different aspects of the food service industry here at UGA. On Tuesday we spent the first part of the day at O'House where we sat in on a meeting where they discussed the remodeling that will be taking place over the summer. We then did a mock health inspection with Kris, where we toured the kitchen, checking for cleanliness, correct temperatures, proper storage of food and equipment, and much more! After lunch we discussed possible themes for our menu take over project, which is our biggest project of the summer. We decided on a New England theme, to show everyone a little bit more about where we are from. The next step is to select recipes! After lunch we spent some time with Stuart, the Food Pro Manager, learning the basics of how Food Pro works and what they use the program for.
On Wednesday we had the pleasure of working in O'house all day, were I spent some time in the kitchen, but spent most of the day working at different stations along the serving line. I had the chance to work at the coffee bar, as well as the Chicken Country Unlimited station, where I restocked food during the lunch rush and scooped ice cream for a LOT of campers. Needless to say, my arm was very sore the next day!
Thursday was most certainly a busy day for us. We started off the day with breakfast, where we met with Bryan, the Interim Executive Director of food services here at UGA. He gave us the low down on his career up until this point, told us about his job and some of the changes he has implemented during his time as the Interim Executive Director, gave us career advice, and answered any questions we had for him. I found this to be a very insightful experience. The rest of the day consisted of visiting the construction area where two retail operations will be opening (Panda Express and a new and improved Chick-fil-A), sitting in on a construction meeting, meeting with the Assistant Director of Business Services for Food Services, and getting a more in depth tour of the central storage facility and learning about the process of ordering supplies for an operation of this size.
Before we knew it, it was Friday, and we were working in the kitchen at Bolton Dining Hall. I had the opportunity to do some prep work for the following day, such as spice rub ribs to be smoked, as well as make a very large batch of baked mac and cheese, and a lemon parsley sauce that was to be served along side tuna steaks.
After the very busy week, it was time for some more adventuring! Maura and I had heard about the Broad River Outpost, and decided to go check it out. We rented a double person kayak and spent 3 hours paddling down the Broad River. They have two different options to choose from, a scenic route, and one with some class one rapids. Although the rapids sound really fun, we decided to take it easy and enjoy the beautiful scenery along the calm river. However, because of the little rain that we have had recently, the river was really low and we got stuck on the bottom a couple of times!

Later in the day we decided to venture downtown, where we discovered a late night cafe and bar called Hendershot's that had musicians playing inside. It was a really neat spot (and pretty classy if I do say so myself!). I am pretty quickly learning that there is always something to do in Athens!

Oh and before I forget, I have to mention Zombie Donuts! It is an amazing donut and coffee shop that we discovered in downtown Athens. They make donuts fresh all day and you get to chose your toppings! I have to admit, it's so good, I may never look at a donut the same way ever again...
