The first week of our internship, we got introduced to the main staff of who we are going to be working with. Our preceptor, Alan, has been the absolute best! The other interns and myself laugh about our "Alan" jokes and statements. Whenever there is something concerned or questions, we write a list in numerical order and we plan to write them down and just hand it to him after our internship is complete. This week, especially, we worked with the Registered Dietitian which has been very informational with a lot of experience. Our internship includes a Capstone Project and the RD has been super helpful of this process. This includes recipes, nutrition value, and cost of food. This Capstone Project requires us to develop 8 recipes for a Gluten-Free dining facility that will be open for the next school year. Along with this recipes we have to develop an opening event for the facility.
Although this internship has been a great experience so far, I have started to realize what it means to live in Texas. First of all, the weather is unpredictable. One day it turned from a dust storm to a down pour of rain with thunderstorms and hale then turned out to be a 4am fire alarm the day before the first day. There are too many spiders down here that even live after being sprayed with Raid. Then again the maintenance does a good job of spraying the apartment and leaving nice notes for the residents.
